Inferno WoodFired Pizza Kitchen‘s dough is what it’s all about!! Crust is king we believe! We use a proprietary blend of Antimo Caputo’s "00" Imported Italian flours to achieve a thin, delicate yet crispy crust that is fluffy and a bit chewy on the inside. We cold ferment our dough for at least 48 hours to get a tasty sourdough then we hand roll it and cold proof it for another 18 hours to develop the incredible taste and texture of our crust.
There is no substitute for quality! Bianco DiNapoli tomatoes, grown in Los Gatos California, are organically farmed, hand-picked, washed, sorted and packed once a year within hours of harvest. There are no chemicals, firming agents or preservatives. Each can consists of Bianco DiNapoli tomatoes, sea salt and three leaves of basil. Nothing but the best!
