Our story began more than 30 years ago in our home kitchen using pizza stones in the oven. I always had a plan to make exceptional thin crust pizza at home, and the pizza we made was really good, but I couldn't get exactly the result I was looking for. I realized that our home oven was not capable of getting hot enough for an amazing crust and a quick cooking time, of course Google didn't exist like it does now, or else I could have educated myself so much quicker!
I started experimenting making pizzas on the barbeque for my family using store bought dough, this worked better, but the dough was never was quite right so I decided to make my own. I did lots of research and looked at all sorts of recipes and took the best from each to get started. I was able to perfect my dough recipe and refine my pizza making skills after we started the catering business. Today we have refined our dough making down to an exact science, adjusting little things for weather changes in humidity and outside temperature and so on.
The real game changer came when we decided to build a wood fired oven in our backyard in 2003. The first pizza that we cooked in there changed everything! We couldn't believe the amazing taste and texture of the thin and crispy yet fluffy crust. The wood fired oven can rise to the proper temperature just barely exceeding 900 degrees which is essential to create the perfect pizza. My family and I expanded our repertoire by experimenting with different sauces and toppings. We constantly had all of our friends and neighbors over for pizza parties just so we could make a ton of pizza! I mean who doesn't love a tasty pizza?!
We received great reviews from our family and friends, so we decided to spread the love around! We now serve our wood fired creations throughout San Diego with our amazing mobile WoodFired Kitchen. You'll find us all over San Diego at Weddings, Wineries, breweries, sporting events, Private Parties, Apartment Complexes, and local business parks and festivals.
Our pizza and breads are one-of-a-kind. We make our dough fresh daily, and then let it cold proof for at least two days to get that perfect flavor and texture. We use the freshest ingredients available in everything we serve, starting with our imported Italian Caputo "00" flour and our award winning Bianco Di Napoli Tomatoes from Los Gatos California.
