At Inferno WoodFired Pizza Kitchen we use the finest Antimo Caputo "00" Imported Italian flours in our own unique blend. We cold proof it for at least 48 hours before we hand roll it and cold proof it again for another 18 hours to develop the incredible taste and texture of our crust.
There is no substitute for quality! Bianco DiNapoli tomatoes, grown in Los Gatos California, are organically farmed, hand-picked, washed, sorted and packed once a year within hours of harvest. There are no chemicals, firming agents or preservatives. Each can consists of Bianco DiNapoli tomatoes, sea salt and three leaves of basil. Nothing but the best!
